How did Lobsterdamus get started?
It started as a family tradition. Instead of having turkey or prime rib for the holidays, my family would grill lobster over mesquite fire wood. So, being in the food industry with my partners, we decided that one day we would sell it at the Orange County Night Market and lucky for us, it became a hit.
How do you find your island?
It truly makes me smile when customers get try our family tradition, by having grilled lobster over a bed of noodles. But, it’s honestly being able to mentor the younger employees, to become better cooks and human beings, the same way Roy Choi did for me at Kogi. It makes all this work really worth it.
How do you feel about the cannabis industry today?
I think it’s great. Now that cannabis is legal, it’s another way to bring people together, similarly in the way that food does. I just think sharing a meal and sharing cannabis have many parallels.
How does cannabis help with your creative process?
Cannabis helps me come with all kinds of crazy ideas in terms of recipes. It really enhances the experience. It also helps me deal with putting together all these events across LA, New York and SF.
